WHAT YOU NEED

●    Fettuccine or ribbon pasta

●    Three tablespoons of virgin olive oil

●    Five cloves of minced garlic

●    Three tablespoons of the XO sauce you bought in Singapore

●    Bonito flakes (for toppings!)

●    Salt

●    Pepper

●    Soy sauce

●    Two tablespoons of chopped spring onions

●    One tablespoon of chopped parsley

WHAT TO DO

  1. Fill a stock pot with water, and cook fettuccine or ribbon pasta al dente for about five minutes. Add a pinch of salt to add some flavour to your pasta.
  2. After five minutes, drain the pasta, keep at least one cup of the pasta water, and set them aside.
  3. Meanwhile, prepare your oil and sauces in Singapore, such as the XO, fish, and soy sauce.
  4. Heat a pan with three tablespoons of virgin olive oil over medium heat for two minutes. Place the cloves of minced garlic and stir until it turns golden brown.
  5. Once it turns brown, add three tablespoons of XO sauce in Singapore. Saute and stir it occasionally to infuse the flavours of the sauce into the oil and garlic.
  6. Toss the pasta in the pan and mix to coat it with the sauce.
  7. Add two tablespoons of pasta water, salt, pepper, and a tablespoon of fish and soy sauce to taste.
  8. Once cooked, remove it from the pan, and plate it. Top it with the flakes, spring onions, and parsley.
