Destemmer; Used To Separate and Crush Grapes to Get Sugary Juice That Is Going To Be Fermented

Destemmer is a machine used to separate the stems from the grapes to collect the juice from it. Destemmer is of three types, such as crusher-destemmer, destemmer-crusher, and destemmer-only. Destemmer works in three different types of functional areas, such as reception hoppers, rollers, and destemming. However, the aforementioned processes can either be performed in sequence or sometimes are not necessary. In the reception hopper, the grapes are dumped and the stems are separated and sent to the next stage. Separated grapes and stems are then get crushed into rollers. Rollers are available in different sizes, configurations, and materials. Destemming is the last process, consists of the destemming basket or destemming cage, made up of steel and pierced. Then this destemming cage or basket spins and crushed the grapes.

Destemming needs to be carefully considered and implemented when bottling wine grapes. The winemaker will generally add the sugar-free secondary fermentation yeast to the batch of wine before fermentation to produce a distinctive taste in red wine. There are various other methods of bottling wine such as single fermentation, CO2 canning, bulk fermentation, decanting, and siphoning, but there are significant differences in the quality of the final product between these methods. The quality of a bottle of wine is primarily determined by the process of fermentation followed by bottling. Destemming is not required when bottling red wines but if one chooses to do so, it can be the difference between a good and great tasting wine.

The process of stemming involves removing the grape skins and the entire seed pod from the grapes. These are removed in one piece and are placed in the primary fermentation vat. After the cat has been filled with suds, the residue of the grape skins and seed is allowed to ferment for a sufficient period of time to allow the wine to properly age and mature. Good quality red wines are aged for between six months and a year depending on the variety. When the primary fermentation vat has emptied the sediments left behind will have to be mixed with the remaining grape juices to dilute their tastes. The process of mixing the sediments is referred to as dying and is achieved by pouring the grape juice mixture into another container. 

Destemmer is extensively used in small-scale industries, especially in winemaking. Destemmer is equipment that has the configuration of both crushing and destemming. Destemmer-crusher makes the wine-making process more efficient, which creates a higher quality of the wine. In this type of destemmer, grapes and stems are crushed more softly compared to another type of destemmer. While destemmer-only has little rough destemming action, which does not have rollers, which leads to crack the grapes without rollers. As the destemming is the place at a rough level, there is no chance of whole grapes is remain at the end. These types of destemmer are used in middle- or large-scale industries, where a high-quality end product is required.
