If you really want to go for something healthy to fill your stomach which will take less, then 10 minutes then here is the best and super easy to cook. This lunch idea which I am going to share with you is completely Vegan and Gluten free and the best part the Ingredients which all are use in this, you can change to your own link and taste.


This Plant based meal plans is similar to last meal plan which is shared with you but in that you need to roast the vegetables but in this you can have same without cook and it will be as tasty as the one which is cooked.

Ø Chickpeas

Ø Tahini

Ø Tomatoes

Ø Cucumbers

Ø Olive oil

Ø Onions


This lunch bowl will be going to take 10 minutes this is the total time and no bifurcation as this all time you need in complete preparation this healthy bowl.

Ingredients

Ø 2 lettuce leaves, thinly chopped

Ø 4 cherry tomatoes, halved

Ø 1 cucumber, cubed

Ø 1/2 cup arugula, chopped

Ø 2 scallions

Ø 1 tsp olive oil

Ø 1/2 tsp vinegar/lemon juice

Ø 1/2 cup canned chickpeas, rinsed and drained

Ø 2 tbsp. hummus

Ø 2 artichoke hearts from a jar

Ø 2 roasted peppers of choice

Ø 2-3 radishes

Ø 1 tsp toasted sesame seeds

Ø ground black pepper

Ø 1 slice of whole grain bread


How to cook this easy plant based meals lunch bowl?

Ø Salad: In a small bowl mix lettuce, tomatoes, cucumber, arugula, scallions, olive oil, vinegar/lemon juice. Add a tiny pinch of salt.

Ø In your lunch bowl arrange the salad, chickpeas, radishes, roasted peppers, artichokes and hummus. Grind black pepper and sprinkle roasted sesame seeds.

Ø Enjoy lunch with or without bread.
