Tea is a popular beverage made by pouring hot water over fresh or cured leaves of the Camellia sinensis shrub. The Camellia species is native to China and other East Asian countries. It is the most popular beverage in the world, surpassing even water. Traditional tea processing results in leafy, or "green", grades and broken, or "blue" or "red" grades. These leaves are larger than others. FP and OP, for example, are leafy grades. Souchong, or "green" tea, is the most common of the three. BP and PS are broken grades. The former contain tender shoots while the latter contain tougher leaves and astringent properties.
