- Cut 2 raw bananas in half and boil. Cut into pieces and puree in a bowl.
- Now add 1/2 cup grated broccoli, 1/2 cup grated cheese, 1 teaspoon green chili sauce, 1 teaspoon red chili sauce, and stir. Also add 1/2 teaspoon of parsley, 1 teaspoon of chili flakes, and salt to taste.
- Now mix all the ingredients well. Form balls out of them.
- Make a paste by mixing 3 teaspoons of cornstarch and 2 tablespoons of water, and salt. Dip the green banana balls in the cornmeal batter, then in the breadcrumbs.
- Deep-fry the nuggets until golden brown. Serve with sauce.
Recipe: Green Banana Tikki
- First, prepare 2 green bananas and 2 peeled potatoes. Cook them for about 10 minutes. Remove from water and let cool. Peel and transfer to a large bowl.
- Mash the potatoes and banana with a fork or potato grinder. Add 1 teaspoon red chili powder, dried mint leaves and salt to taste. Add 1/4 cup tapioca flour and stir until smooth.
- Lubricate your hands and shape the Tikki (cutlets). Heat a heavy-bottomed skillet and add to it. Cook the Tikki over low heat for 8–10 minutes, turning occasionally until they are browned on both sides.
Recipe: Green Banana Fenugreek Dry Curry
- Start by cooking 2 raw plantains for 10 minutes. Peel and cut them into slices.
- Heat a heavy-bottomed pan and heat a little oil; add 1 tsp mustard seeds and 1 coniferous curry leaf. Wait a few seconds until they turn brown.
- Add the plantain and add 1 teaspoon of red chili powder, 1 tsp turmeric powder, 1/2 tsp asafoetida, and 2 tbsp dried lamb lentil leaves. Stir for a few minutes. Remove from the stove and serve.

- Peel 4 green bananas and put them in cold water for 10–15 minutes. In the meantime, preheat the oven to 180C and line a baking sheet with parchment paper.
- Now chop the bananas into small pieces. Add 2 tablespoons of coconut oil, salt, and pepper to taste. Mix well.
- Place the chips on a baking sheet and bake for 30–40 minutes, inverting. They are done when they are firm to the touch and completely brown.
- Remove the baking sheet from the oven and let cool on the baking sheet.
