Balsamic vinegar, also known as Aceto balsamico, is vinegar manufactured partially or totally of grape must, which is the fresh grape juice of Trebbiano and Lambrusco varieties. Good-aged balsamic vinegar has nuanced flavors and a velvety texture, and they're sometimes drinking as a palate cleanser or aperitif.
  • Balsamic Vinegar of Modena- On the commercial-grade end of the spectrum, goods with an IGP designation, which requires only two months of maturing, are available. They are often thinner and less balanced, but they are a better choice for balsamic glazes or dressings where they don't want to use significant amounts of the expensive 25-year-old stuff.

 

How to Use Balsamic Vinegar:

 

Traditional balsamic vinegar isn't meant to be cooked with since heat destroys the complex scents, nor are they meant to be used in salad dressings because the tastes that have taken years to develop are confused. Instead, drizzle it over single components like strawberries or Parmesan cheese, or use it as a garnish on anything that would benefit from its intense sweetness and acidity, such as a rich stew or risotto. It's also great over rich, creamy sweets like ice cream or panna cotta.
