Prästost is a Swedish granular hard cheese made from cow's milk, closely related to Svecia and with 45–50% fat in the dry matter. Originally, it used to be made from tithing milk on Småland vicarages, whereby older, soured curd was added to the curd milk.

The word priest cheese appears for the first time in Dagligt allehanda as Smålands- or so-called priest cheese. [3] At that time, the peasants would pay a so-called tithe, an annual church tax to the priest. In Småland, which was one of the country's main areas for milk and cheese production, cheese could serve as a means of payment for tithing. Ordinary cheeses were made on skim milk, but the priest wanted to give the best he could and therefore the cheese was made on skim milk. The cheese was called priest's cheese and you could even have some cream in it.

However, these cheeses were not at all gritty cheeses like today's priest's cheese. It was not until 1786 that the first granular cheeses were made after the Swiss model on Marsvinsholm in Skåne, and around 1820, the new cheese-making technology began to spread to Västergötland. [3]

In the middle of the 19th century, the dairy business really took off in Sweden and the home-growing traditions were transformed into more modern forms.
