Pure Stevia Extract vs Raw Stevia and Its Usage in Product Recipes

Often touted as the healthier alternative to table sugar, stevia has been doing the rounds in all special dietary recommendations. But have you ever stopped to consider what form of stevia goes into all the food, beverages, or medicines? Is it crude stevia or pure stevia extract?

Differentiating Between Raw Stevia and Pure Stevia Extract:

Stevia essentially refers to the entire plant and its components, and chemically speaking, the sweet components (rebA, rebD, rebM) of the stevia leaf are known as steviol glycosides. Interestingly the stevia leaf contains over 40 steviol glycosides and is almost 250-300 times sweeter than table sugar. However, with crude stevia, the area of concern remains the potent bitter and astringent aftertaste, especially with food. This poses a serious obstacle to the successful commercialization of these natural sweeteners. Apart from the lingering aftertaste, another feature that goes against crude stevia is that it is not completely water-soluble, which means you might find tiny bits and bobs floating on a beverage.

Pure stevia extract on the other hand is devoid of any undesirable taste and insolubility. Tried and tested methods are deployed to extract the sweet components of the leaf in their natural state, without making any alterations in the chemical composition. Crude stevia when compared to natural stevia extract is much weaker. Hence dried stevia leaves are often added to tea leaves where it contributes little to the sweetness and more to the overall flavor whereas pure stevia extracts are popularly used for sugar reduction in different product recipes.

Stevia Solution for Every Product Category:

For every product category, there is a specific stevia extract or blend. During the extraction process, the steviol glycosides are collected to eventually produce natural stevia extract. These extracts are then utilized to sweeten a wide variety of food and beverage products. It’s interesting to note that these products that are produced with the help of stevia are essentially a well-crafted blend of pure stevia extract along with other permissible ingredients.

The crude leaves have a high concentration of stevioside, which has a profound metallic and bitter aftertaste. The more desirable flavor is offered by the Reb-A component of the leaf, and the Reb M component is considered to be the best in class which is bereft of the bitter aftertaste. It also, surprisingly, supersedes the sweetness of regular sugar. Below you will find the classification of stevia by product form and final usage.

Pure Stevia Extracts, Grades, And Blends at Arboreal Stevia

Natural stevia extract, unlike crude stevia, possesses GRAS (Globally Recognized As Safe) status, hence they can be sold commercially and be used as food additives in different food, beverage, and pharmaceutical products. The several standard grades of stevia extracts that are available are Reb A (RA50, RA60, RA 80, RA97, RA99) RebD (RD 95), and Reb M (RM95). Here are some of the different extracts and blends we deal in.

1. ArboPURE: This range of pure stevia extract is directly extricated from the crude stevia leaf using an industry-approved organic process. This is suitable for direct application in a wide range of product applications.

2. ArboBIONATURA: This is a proprietary range of natural stevia extracts that facilitate extensive calorie reduction.

3. ArboSYNERGY: This is a range of enzymatically enhanced stevia extracts, that facilitates the delivery of high taste performance which is at par with expensive RebD and RebM-based extracts.

At Arboreal Stevia, we are extremely stringent about the taste, quality, and consistency of the grade of pure stevia extract we manufacture. Often even premium purity grades differ in quality and taste, this is because the quality of the extract eventually depends upon the plant variety and extracting method.
