Summer sunshine bottled up? Look no further than this vibrant sweet mango pickle recipe! This condiment is a delightful explosion of sweet, tangy, and spicy flavors, transporting your taste buds to a tropical paradise with every bite.
Perfect for:
- Complementing savory dishes like curries, pakoras, or grilled meats.
- Enjoying on its own as a tangy and sweet appetizer.
- Adding a burst of flavor to cheese platters or sandwiches.
Ingredients:
- 2 ripe mangoes (Ataulfo or Alphonso mangoes work well)
- 1 cup light brown sugar
- 1/2 cup white vinegar
- 1/4 cup raisins
- 1/4 cup chopped almonds
- 1 tablespoon vegetable oil
- 1 teaspoon black mustard seeds
- 1/2 teaspoon fenugreek seeds
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon red chili powder (adjust for spice preference)
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions:
- Prep the Mangoes: Peel the mangoes and discard the pits. Slice the flesh into thin julienne strips or small cubes.
- Marinate the Magic: In a large bowl, combine the mango pieces, brown sugar, and vinegar. Toss well and let marinate for at least 30 minutes, or up to overnight, to allow the flavors to meld.
- Temper the Spices: Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and fenugreek seeds. Let them splutter for a few seconds, then add the turmeric powder, red chili powder, and ginger. Sauté for 30 seconds, releasing the fragrance of the spices.
- Pickle Perfection: Pour the hot oil mixture over the marinated mangoes. Add the raisins, almonds, and salt. Mix everything thoroughly to ensure even distribution of flavors.
- Simmer Down: Transfer the pickle mixture to a saucepan and bring to a gentle simmer. Let it simmer for 5-7 minutes, allowing the flavors to further develop and the mangoes to soften slightly. Don't overcook, as you want the mangoes to retain some texture.
- Jar it Up! Let the pickle cool completely. Pack it into clean, sterilized jars. Seal the jars tightly and store them in a cool, dry place. The pickle will mature and develop even more flavor over time.
Tips:
- For a spicier pickle, add a chopped green chili pepper along with the ginger.
- Want a tangier flavor? Add an extra tablespoon of vinegar during the marination stage.
- This pickle can be enjoyed after a few days, but the flavors truly come alive after 2-3 weeks of resting.
