Whenever we go back to my husband's hometown for any of the summer vacations -- Flag Day, July 4th, or Labor Day -- there's always just a little taco cart sitting at the playground with the remainder of the food trucks. More info

This 1 cart always a line extending out ahead and around the corner with folks waiting to get their mitts on classic road tacos, burritos, and broiled Mexican road corn (elotes) slathered in sauce.

There is simply no way to consume this messy corn on the cob finely, but usually you're not independently since half the other folks gathering if are covered in it as well. Little town occasions, and their road cart food, mean that summer is here!

After we are far away from the lively parties of his hometown, my husband and I will relive the pleasure by grilling corn on the grill and making our very own version of Mexican road corn in just a couple of minutes. The charred kernels and the skillet make this different from your everyday corn on the cob.

If you aren't able to discover traditional Mexican crema into your regional grocery store, by all means, utilize regular sour cream. Crema is a little thinner than sour cream and has added salt, making it additional divine. It's usually that which we keep in our house now!

And when cotija is not available, feel free to omit it, or just use grated Parmesan instead.
