How to make Kombucha

Kombucha is a fermented tea drink that's been around for thousands of years. It's delicious, healthy and easy to make at home! How to ferment kombucha?

A good rule of thumb is that if your house is between 70-80 degrees, your SCOBY will need about two weeks to ferment; if your home is warmer than 80 degrees, it will take less time (about one week). Here are some steps to ferment kombucha:


The first step is to brew your tea by using either a kombucha starter culture or a tea bag. If you're using the starter culture, follow the directions on the package. If you're using a tea bag, make sure it's organic and free of pesticides. Then add your sugar (1 cup per gallon of water), allow it to cool down, then add your tea and let it ferment for 24 hours in an airtight container.


After 24 hours, remove the scoby from its liquid and place it on a paper towel to dry out for about 30 minutes. Afterward, add your mixture of water and sugar into a glass jar or crock that's been washed with vinegar and rinsed thoroughly with hot water. Add an additional 2 cups of sugar if you want your brew to be sweeter than usual—just don't let it ferment too long or else it could become overly sweet!

Let this sit for 5-7 days at room temperature (between 70-85 degrees), stirring every 12 hours or so to keep oxygen levels low during the first three days; after that time has passed, move it somewhere cooler.
