Though not officially an Hangzhou restaurant, Alhambra's Sichuan-focused Legendary Restaurant serves the Hangzhou delicacy of Dongpo pork. The top-rated restaurant set in Alhambra's city of L.A. serves sliced braised pork belly stacked high into a pyramid. The jiggly shape is encircled by a crown of steamed buns and served on a bed of salty bok choy. Visitors eat it using chopsticks and with a bun in one hand, ripping soft pork apart and cramming it inside the bread.


Lamb Neck Shawarma


Ori Menashe was inspired to adapt the tastes of shawarma to his Middle Eastern restaurant, Bavel, by childhood recollections of eating it in Israel and Turkey. Menashe roasts seasoned lamb neck for 12 to 16 hours at a low temperature rather than using a vertical rotisserie. The end product is a tender beauty served with Iraqi flatbread, pickles, tahini, and tangy amba sauce.
