“France will invite the world to its table, said Philipp Würz, who is the catering manager for the Olympics organizing committee. Athletes know they will eat well here. Our goal is to provide them with high-quality food.”

The eatery at the Olympic Village, which is meant to be the biggest restaurant in the world, is expected to seat 3,500 people. In addition, athletes will have access to grab-and-go food points, including one dedicated exclusively to French cuisine cooked up by chefs, Sodexo said.

Sodexo to Offer Sustainable and Gourmet French Cuisine at Olympic Paris 2024

“What I cooked here is poultry, guinea fowl slowly roasted with a nice crayfish jus, very reduced, very intense, with a poulette sauce (white sauce), so it’s a kind of creamy, comfort food,” renowned chef Amandine Chaignot, who runs a Paris restaurant, explained.

“I wanted it to be a bit representative of what we do in France so it’s quite ‘gourmand,’” she said.

The Olympic Village also will feature a boulangerie producing French baguettes recently given U.N. world heritage status and other bread. Croissants and other pastries will also be available. One exception will be made to the French way of life, though: No wine, or any form of alcohol, will be offered to Olympians in the village, organizers said. Champagne and liquor will be reserved for reception events.

Stéphane Chicheri, the chef for Sodexo’s venues and sporting events branch, said more than 500 menu items will be available to meet the needs of all sports, special diets, eating habits, and religious beliefs.

The upcoming Paris 2024 Olympics is not only about sports but also about French gastronomy and sustainability. French food services company Sodexo has been chosen to oversee catering at the athletes’ village and other event sites. To meet the challenge, the main restaurant in the village will use reusable serving dishes, and all meals will be based on seasonal products, with one-third being plant-based. In addition, Sodexo will ensure that all meat, milk products, and eggs are French-produced, and imported items will be organic or fair trade certified. To minimize waste, unused goods will be given to food banks and associations, while food scraps will be turned into compost or biogas.

Olympic Paris: Sodexo's Gastronomic and Sustainable Approach to Feeding Athletes at Paris 2024

Athletes need a balanced and diverse diet to fuel their bodies, according to Hélène Defrance, a competitive sailor and Olympic medalist who specializes in nutrition. Sodexo plans to offer a wide range of tasty and healthy options, prepared by some of France's most-renowned chefs, ensuring that athletes are well-nourished and satisfied. The meals will also reflect the conviviality of French culture, bringing a fun experience to the Olympic Village. With this approach, Paris 2024 is set to become a sustainable and gastronomical spectacle for athletes and visitors alike.

“It’s not only the moment when we feed our performances and get prepared for competition from a nutritional point of view, Defrance supposed. It’s also a moment when we regenerate and take a break, some time for exchanges, usually a pleasant moment.”

Chef Alexandre Mazzia, known for his Michelin three-starred restaurant AM in Marseille, is no stranger to serving athletes. His culinary creations have been savoured by professional athletes, including kayakers, long-distance runners, judo practitioners, as well as French and NBA basketball players. With his expertise, Mazzia is part of the team of renowned chefs that will be creating gourmet, healthy, and environment-friendly meals for the 15,000 athletes expected to participate in the Olympic Games in Paris 2024.

“They are always surprised and happy with the moment they spent. I think I’ll meet some of them again during the Games, so that’s great,” he said.
