Distilled spirits, also known as hard liquor, is an alcoholic beverage produced by distillation of a fermented product like grapes, grains, sugar cane or potatoes. Distillation: The fermented wash is heated in large copper pot stills. This condensed liquid, known as low wines, contains a higher percentage of alcohol than the original wash.


Second distillation: For higher alcohols like whiskey and brandy, the low wines undergo a second distillation which further purifies and concentrates the alcohol. During this process, the foreshots and feints (containing undesirable alcohols and organic compounds) are discarded and only the desirable high-proof alcohols in the heart cut are collected.


Ageing: For some spirits like whisky, rum, brandy and Tequila, the distilled alcohol is then aged in wooden barrels to mature and impart additional flavors from barrel aging before bottling.


Types of Distilled Spirits


Whiskey: Made from fermented grain mash (barley, rye, corn, wheat etc.), whiskey is one of the most popular spirits worldwide. The major types are Scotch, Irish, American, Canadian and Japanese whiskey.


Brandy: Produced by distilling fermented fruit juice or wine, grape-based brandy is the most common type. Other fruit brandies include apple, pear and plum brandy. Cognac and Armagnac are specific grape brandies from regions in France.


Rum: Made by fermenting and distilling molasses, sugarcane juice or directly from sugarcane. The major styles are light/white, gold, dark and spiced rum based on aging.


Vodka: A neutral grain spirit distilled to a high proof and no discernible taste of the original grains. The most common base materials are grains like corn, rye, wheat or potatoes.


Gin: Made by redistilling alcohol with juniper berries and aromatic botanicals. London dry gin and Dutch jenever are the major styles with subtle flavors variations.


Tequila: Produced from the blue agave plant which is cooked, mashed and distilled. Types include blanco/silver, reposado, anejo based on duration of aging. Mezcal is a similar spirit made from agave in Oaxaca, Mexico.


Cachaca: A sugarcane spirit popular in Brazil, it's the base for the caipirinha cocktail. Closely resembles rum but made with a different yeast.
