For Rice:
- 2 cups Basmati rice (acha wala long grain lein)
- Salt (swad anusar)
- 1 bay leaf
- 2–3 cloves
- 1 black cardamom
- 1small stick cinnamon
For Keema:
- 500g chicken keema
- 2 onions (bareek kati hui)
- 2 tomatoes (bareek kati hui)
- 1 tbsp ginger-garlic paste
- 2–3 green chilies (slit)
- 1/2 cup dahi
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt (swad anusar)
- 1/2 cup chopped coriander & mint leaves
- 3 tbsp oil or ghee
For Layering:
- Fried onions (birista) — 1/2 cup
- Few saffron strands soaked in warm milk
- Ghee — 2 tbsp
👨🍳 Recipe — Step by Step Banane Ka Tareeka:
Step 1: Chawal ko tayar karo
- Basmati rice ko acche se dho kar 30 mins ke liye bhigo do.
- Ek large pan mein paani ubalayein, usme thoda namak aur whole spices daalein.
- Chawal 80% tak pakne dein, phir chaan kar alag rakh dein.
Step 2: Keema Masala banao
- Ek kadhai mein oil ya ghee garam karein.
- Onion daalkar golden brown hone tak bhunein.
- Ginger-garlic paste daalkar ek minute bhunein.
- Ab isme chopped tomatoes, green chilies, haldi, mirch powder, aur namak daalein.
- Masala acche se cook hone dein jab tak tel chhootne lage.
- Ab keema daalein, aur 8–10 mins tak bhunein.
- Phir dahi daal kar mix karein aur medium flame par pakne dein.
- Jab keema soft aur juicy ho jaye, to fresh coriander, mint aur garam masala daal dein.
Step 3: Biryani ko layer karo
- Ek heavy-bottom vessel lein. Sabse pehle thoda ghee lagayein.
- Phir ek layer chawal ki daalein, uske upar ek layer keema masala ki.
- Phir se chawal ki layer, aur upar se fried onions, saffron milk aur ghee drizzle karein.
- Aise 2–3 layers bana kar dhak dein.
Step 4: Dum Dena
- Patile ko aluminium foil ya tight lid se seal karein.
- 10–15 mins low flame par dum dein.
- Off karke 10 mins baad serve karein.
