- Soya Chaap Sticks — 6 (boiled & peeled)
- Dahi — ½ cup
- Ginger-Garlic Paste — 1 tbsp
- Haldi — ½ tsp
- Lal Mirch Powder — 1 tsp
- Kashmiri Mirch — 1 tsp (colour ke liye)
- Garam Masala — ½ tsp
- Lemon Juice — 1 tbsp
- Mustard Oil — 1 tbsp
- Salt — as per taste
🍚 For Biryani Rice:
- Basmati Rice — 1.5 cup (soaked for 30 mins)
- Water — 5 cups
- Bay Leaf — 1
- Cloves — 3–4
- Green Cardamom — 2
- Cinnamon — 1 stick
- Salt — 1 tsp
🧅 For Biryani Masala:
- Ghee/Tel — 2 tbsp
- Jeera — 1 tsp
- Biryani Masala — 1.5 tsp
- Onion — 2 (sliced, golden brown fry)
- Tomato — 2 (finely chopped)
- Green Chillies — 2 (slit)
- Curd — 3 tbsp
- Fried Onions — for layering
- Fresh Mint & Coriander — for garnish
- Kesar Milk — 2 tbsp (optional but royal!)
🍳 Recipe — Banane ki Vidhi:
🔥 Step 1: Marinate Karo, Tandoor Jalao!
- Chaap ko marinate karein sab masalon ke saath. Kam se kam 1 ghanta (ya overnight).
- Tandoor ya grill pan mein golden brown hone tak chaap ko roast karein.
- Pieces ko 1-inch tukdon mein kaat lein. (Soft & smoky texture aa gaya!)
🍚 Step 2: Rice Ko Perfection Tak Pakayein
Boiling water mein saare whole spices & salt daal kar soaked rice ko 90% tak paka lein. Drain karein aur side mein rakh dein.
🍲 Step 3: Masala Ki Jalwaa-E-Taayari
- Kadhai mein ghee garam karein, jeera daalein.
- Ab fry ki hui pyaz, hari mirch aur tomatoes daalein.
- Masale daal kar achhi tarah bhunein. Phir dahi daal kar gravy ko rich banayein.
- Ab roasted soya chaap daal kar 5–7 min bhunein.
🍘 Step 4: Dum Do, Dil Jeeto!
- Ek handi ya deep pan mein ek layer rice, ek layer chaap masala daalein.
- Fried onions, mint-coriander aur kesar milk daalein.
- Aise 2–3 layers banayein. Lid lagayein, tawa ke upar handi rakhkar slow flame pe 20 mins dum dein.
