  • Elaichi — 2
  • Laung — 3
  • Dalchini — 1 inch stick


For Masala:

  • Tel ya Ghee — 2 tbsp
  • Jeera — 1 tsp
  • Hing — 1 pinch (for digestion aur aroma)
  • Pyaz — 2 (bareek sliced)
  • Ginger-Garlic Paste — 1 tbsp
  • Hari Mirch — 2 (slit)
  • Tamatar — 2 (bareek kate huye)
  • Fresh Methi Leaves — 1.5 cup (cleaned & chopped)
  • Mix Veggies (optional) — 1 cup (boiled)
  • Dahi — 3 tbsp (for richness)


Masale:

  • Haldi — ½ tsp
  • Lal Mirch — 1 tsp
  • Dhaniya Powder — 1 tsp
  • Garam Masala — ½ tsp
  • Salt — as per taste


For Garnishing:

  • Fried Onions — ½ cup
  • Chopped Hara Dhaniya & Pudina
  • Kesar Milk — 2 tbsp (optional but royal!)


🍳 How to Make Methi Biryani (Banane ki Vidhi):


🌾 Step 1: Chawal ko Sunehre Safar par Le Chalein

Ek patile mein paani, whole spices aur namak daal kar ubaalein. Phir soaked chawal daalein aur 90% tak paka lein. Drain karke side mein rakh dein.


🍲 Step 2: Methi Masala ki Mehfil

  1. Kadhai mein tel/ghee garam karein, jeera aur hing ka tadka lagayein.
  2. Ab pyaz golden brown hone tak bhunein — patience is key!
  3. Add ginger-garlic paste & green chilies. Thoda bhunein.
  4. Tamatar daalein, soft hone tak pakayein.
  5. Ab methi leaves daal kar 5–6 mins bhunein. Kadwahat kam karne ke liye yeh step zaroori hai.
  6. Mix veggies (agar use kar rahe hain) daalein.
  7. Ab masale daal kar thoda bhunein.
  8. Dahi daal kar sab kuch achhi tarah se milaayein. Jab tak oil chhoot jaye, tab tak pakayein.


🏺 Step 3: Dum Dena — Jaise Riwaaz Hai

  1. Ek heavy bottom pan mein ek layer chawal ki bichhaayein.
  2. Upar methi masala daalein.
  3. Phir chawal, fried onions, kesar milk aur hara dhaniya-pudina.
  4. Aise 2–3 layers banayein.
  5. Lid lagayein aur slow flame pe 15–20 mins “dum” de.
