Min specs for travelling and uni?

i everyone, I'm new to this forum so not too sure if this is in the right place. 
But I'm looking at buying a MacBook, and I know they are overpriced but I'm set on getting one.Anyway, I'm looking at doing some travelling around Australia in a van, and wouldn't mind having a laptop that I can do some basic photo editing on, some graphic design and also some video editing. I'm also at uni doing Commerce so I'll be using it for that. Would the new MacBook Pro 2016, with 8GB of Ram, an i5 Processor and 256Gb SSD be enough? I also have a 2TB portable hard drive to back up/use as additional storage.
