🛒 Ingredients — Samagri
Hariyali Paste ke liye:
- 1 cup hara dhaniya (coriander leaves)
- 1/2 cup pudina (mint leaves)
- 2–3 hari mirch (green chili)
- 1 inch adrak (ginger)
- 6–7 lehsun ki kaliyan (garlic cloves)
- 2 tbsp dahi (curd/yogurt)
- Namak swad anusar
- Thoda sa paani (for blending)
Biryani ke liye:
- 2 cup basmati chawal (boiled 90% tak)
- 1 cup mixed vegetables (gajar, beans, matar, etc.)
- 1 bada pyaz (barik kata hua)
- 1/2 cup dahi
- 2 tbsp oil ya ghee
- 1 tsp jeera
- 1 laung, 2 elaichi, 1 tej patta, 1 dalchini stick (Whole spices)
- 1/2 tsp haldi
- 1/2 tsp garam masala
- Hariyali paste (upar se bani hui)
- Fried onions (optional)
- Kesar dudh (optional, for aroma)
- Biryani masala (optional)
👩🍳 Cooking Method — Banane ki Vidhi
Step 1: Hariyali Paste Banayein
Sabhi ingredients ko blender mein daal kar ek smooth hari chutney jaisa paste bana lein. Agar zarurat ho toh thoda paani daal kar blend karein.
Step 2: Veggies ko Cook karein
Ek pan mein oil ya ghee garam karein. Isme jeera aur sabut masale daalein. Thoda bhunne ke baad pyaz daalein aur golden brown hone tak bhunein.
Ab isme sabziyaan daalein aur halki aanch par 4–5 min tak bhunein. Phir dahi aur hariyali paste daal kar achhi tarah mix karein. 5–7 minute tak cook karein jab tak oil chhootne lage.
Step 3: Rice Layering
Ek handi ya heavy bottomed pan lein. Sabse pehle ek layer cooked rice ki daalein, phir ek layer masale wali sabzi ki. Aise 2–3 layers karein. Upar se fried onions aur thoda kesar wala dudh daal sakte hain aroma ke liye.
Step 4: Dum Lagayein
Handi ko dhak kar low flame par 10–12 min tak dum lagayein. Agar possible ho toh tawa ke upar handi rakhein jisse rice neeche se jalta nahi.
