In the spray dryer experiment, the exhaust air temperature is related to the moisture content of the product and should be determined according to the allowable moisture content of the product. The higher the hot air temperature, the higher the thermal efficiency and the better the economy. However, excessive hot air temperature will cause deterioration of product quality, so the hot air temperature should be appropriately increased on the premise of ensuring product quality.
The hot air temperature of the spray dryer will have a significant impact on the bulk density of the product. High-temperature hot air tends to produce low bulk density, which is due to the rapid drying effect of hot air, which hardens the surface of the particles and expands the residual moisture, which promotes the formation of balloon-like hollow particles. If high bulk density (low specific volume) is required, or solid particles are required, the design should not use hot air at high temperatures to contact the newly formed droplets. In the drying of chemicals, the hot air temperature is as high as 538 °C, and the product particles are large. It was found that the residual steam had sufficient pressure to blow the outer surface into a cavity. In food spray drying, the hot air temperature generally does not exceed 177°C, so the initial diameter of hollow particles is not as large as that of chemicals.
The dry bulk density of the spray dryer is also called the bulk density, which plays a decisive role in the drying effect of the product, so it is a very important job to determine the dry bulk density. Generally, when designing a spray dryer, the drying bulk density should be set well. Only in this way can the product achieve a better drying effect. The dry bulk density of the spray dryer cannot be determined casually, and a variety of comprehensive factors must be considered when determining, as follows:
(1) Equipment type:
If a co-current spray dryer is used, products with higher bulk density can be obtained, so the selection should be made according to actual needs.
(2) Influence of additives
If you want to obtain products with low bulk density, such as instant coffee, instant tea, certain paint powders, etc., nitrogen or carbon dioxide can be added to the dry material. However, if inorganic salts, such as sodium chloride, are added, the bulk density will increase, so they should be added with caution, and cannot be added by mistake, because it may have adverse effects.
(3) Feed concentration
The feed concentration is proportional to the bulk density. The smaller the feed concentration, the smaller the bulk density and the smaller the production capacity.
(4) Hot air and exhaust air temperature
If the temperature difference between the hot air and exhaust air is large, the bulk density of the product will be lower; if the temperature difference is small, the bulk density will be high. However, the temperature difference should not be too small, because if the temperature difference is small, the amount of air required will be large, which will increase the required power and thermal energy, which will bring adverse effects, so it should not be too small.
